A few weeks ago on a crisp fall Saturday morning, A & I drove two and a half hours to an apple orchard upstate. Naturally, I created a small itinerary the night before and packed some snacks to sustain our energy for the festive day head; sharp cheddar + rosemary crackers, red grapes, and a jug of cool water.

We picked up breakfast & coffee at one of our neighborhood bagel shops and were on our way, hoping that A's '98 Honda Civic would keep it together if only for this trip.

We chose the route with no tolls and consequently, the more scenic route with fall foliage and hazy mountains in the distance.

Stone Ridge Orchard stood out to me while I was doing my research on which orchard to visit. Their apples are sustainably grown with minimal use of pesticides, and they grow many different varieties. We'd later come to find out that Stone Ridge is a small town that seems to be rich in art and history, which we couldn't have loved more.

Because the orchard is a bit far from the city, I was really hoping that it would be free of people, and lucky for us we felt like we had the whole orchard to ourselves.

We stocked up on some locally made cider and donuts from the orchard's small market, and set out to pick a whole lot of apples.

We picked wild flowers, relaxed under the giant oak tree, took a ton a photos, tasted apple after apple, and basked in the serenity of the birds chirping and the bees buzzing. It really couldn't have been a more perfect fall day with A.
Sundays are notably known for sleeping in and making pancakes for brunch. And so we did just that. There was no question about incorporating apples in some way, so I decided on an apple compote and make-shift buttermilk pancakes. The apples are cooked down with brown sugar and apple cider; the pancakes are incredibly fluffy and use lemon juice + organic milk, a suitable substitute for when you don't have buttermilk. Simple and no-fuss, it was the perfect way to top off the weekend.

I was sitting on my back porch on a warm summer evening last week, watching the sun fall lower and lower. Sometimes I forget the simplest of things. To take a step back. To reflect. I am constantly in a rush here. Everyone is. It dawned on me that this time last year, I was in Florida, studying for my second to last physics 2 final, dreaming that I'd be moving to New York City once I graduated in a month. I wouldn't have imagined that one year later I'd actually be here, with a soul full of so much growth, experiences, and accomplishments. It's a damn good feeling.

It's July, which means a few things. Summer is in full swing. It's hot, and incredibly humid lately from all of this rain. My birthday is coming up at the end of the month, as well as my one year anniversary of leaving Florida for this crazy place. I also can't even believe I haven't posted since March. I think I say something like that in every post, but gosh life moves so fast here.

Some updates I've been looking forward to sharing with all of you: I moved into a new apartment with a backyard (!!!) in a pretty wonderful, charming, still-somewhat-Italian neighborhood. My dad and little brother paid a visit to the ol' big apple. And, possibly the most exciting of them all; I wrote an article for Food52!

When Sarah, one of the editors, reached out to me to contribute I truly couldn't believe it. "Me? They like MY blog?" Really, I was in shock. But I am so grateful for the opportunity. Honestly, I needed it too. I've been working between three to four jobs, hustling hard to make it here, which can be a bit draining when none of them aren't what you really want to be doing. But you have to start somewhere though, and really give it everything you have.
Monday morning I awoke, my eye-lids glued three-quarters of the way shut due to lack of sleep, due to last-minute photo editing/blog writing, due to my obsession of making sure last Monday's post was up first thing in the morning. My hand still grasping my phone from pressing snooze <strike>one</strike> twenty-too-many times. I sat up, instantly remembering the dream I wish I didn't have to leave. My feet were so cold. I applauded myself for coincidentally placing my slippers at my bedside the night before. In one foot, in the other. Staring at the window, I dreaded walking over to it. "If there's snow, I'm not going to work. I'm just not doing it", I said to myself with justification.

I peered over at the window again, then back at my bed. "It needs me", I thought with even more justification. Then again back at the window. The fire-escape appeared to be free of snow. It gave me the push I needed to climb out of my warm sheets.

Eyes now halfway open, I found myself at the window sill looking down at a snow-less sidewalk, and even though cold air was sneaking through the crack in my window, I was filled with so much relief. "Thank you. Just, thank you." I said to the universe. "You really understand my feelings of not wanting to wear <strike>ankle-weights</strike> snow boots ever again." (Well, at least until next winter.)

I know I touched on this in my last post, but I really cannot think about it/talk about it/shout it from the fire-escape enough. I've got a serious case of Spring fever, people. I need warmth and sun and cuffed jean jackets. The days where scarves cause my hair to become knotted and nappy at the back of my neck need to be long gone.

To speed up this transition of the seasons (at least in my mind,) I conjured up a simple salad with flavors that are illustrative of both. Grapefruit; winter's best, and fresh mint; a perfectly complementary spring herb, both combined with arugula, cucumber, toasted walnuts, and tossed in a citrus dressing consisting of grapefruit juice, lemon juice, freshly grated ginger, and extra virgin olive oil.

But it's refreshing and makes me think of brighter days, which I think we all could use a bit of. There isn't much of a recipe to it, but I will estimate the proportions I used. Feel free to adjust the amounts to your liking.
I had an impromptu date with this fine city today. Just me, my camera, surrounded by the only thing I felt like I really needed at the moment; New York. Its people, charm, constant life. I set out for the village, my favorite place of all. One moment I'm on 7th ave with crowds and cabs, and the next I'm on a quaint block left only with my thoughts.

And oh, yes. Spring is coming. I can feel it. Breathe it. Dream it. Along with every
other city dweller who is long over this frigid winter. Today was the
second Saturday in a row where I could wear a lightweight coat, ankle
boots, and feel the warmth of the sun on my skin. It was a frabjous day. One for the books, (or blog), I'd like to think.

I felt adventurous. I felt good and happy and was brought back to the time where I realized I wanted to call NYC home one day. I was in the West Village.

I tend to just wander when I'm in the village. It's so easy to do that. When I found myself on Bleecker St., there was no question that I had to keep walking until I fell face-to-face with my favorite pizza joint in the city, Bleecker St. Pizza. I ordered a slice of white and walked back outside where the baskets of the delivery bikes doubled as my table as I stood beside them. It was breezy and sunny, and my hat and half-eaten pizza almost blew away with the wind, but I loved it.

It would have been nice to grab coffee with friends, chat about daily life and what-have-you, but today, I just wanted to explore alone. People-watch, possibly discover something new about myself. New York is perfect for that.

While I strolled the village, I noticed many couples hand-in-hand. More than I usually do. Maybe it's because I wasn't in a constant rush like most days, or maybe it's because of what has been on my mind lately. Most of the time, I like me. I can find the utmost satisfaction spending time with just myself. Today was a prime example of that. I actually feel fortunate that I am this way. Independence and self-happiness are things I truly value. But I can't deny those times where I crave the comfort of another soul. Not just friend-wise, but partner-wise as well. I've never been in a "real relationship". Some would argue it's a good thing, less heart-ache and all that. Others may find themselves in a new relationship just as quickly as their last one ended. Me, I was never really one to think about it all that much. My 'sort-of-motto' has always been something like, "Well, he'll come along someday." But recently, I think about it more and more. And notice it too. They're sharing laughs over brunch, cupping hands in the park... You know, the cliche things people in relationships do.

Everyone has their insecurities, and mine tend to really get in my head. I most definitely have them to thank, at least partially, for not feeling that spark, that connection, very often with someone. Of course the usual things play a role too; being picky (I'm getting better), being busy, etc.

There was that rare time in December. The time when I met someone I just clicked with. It was certainly unexpected, but exciting and new and made me feel a little bit of hope for myself in the crazy world of dating, (and in New York City, nonetheless.) I discovered that the major insecurity I have about myself, he actually really liked. Which was just completely unfathomable to me. But damn, it made me feel so much better about myself. Our first date was the most fun I'd had in while, at least by first-date-standards. When we spent time together, I enjoyed myself. He was silly and open, which made me feel comfortable around him. He brought me out of my comfort zone and I felt more outgoing when I was with him. The introvert in me really liked that. It was also a nice change-of-pace to actually have someone to do daily things with.

However, as things started to feel a bit more like a relationship, rather than casually dating, he just shut off. Ultimately, I knew we were too different for each other. And If I'm being honest, I never really saw a future with the guy. But for the here, for the now, I was content. So we did that thing people in our position do.. "lets just be friends." And well, that was pretty much it. Despite the short time of dating him, and knowing he wasn't "the guy of my dreams" or whatever, it still hurt just a little bit. It's that thought. The thought that someone got to know you, but doesn't want you... It just feels a bit insulting. We want to be wanted, insecurities and all.

It was like I was given a small taste of what actually finding comfort in another might be like, and yeah, it tasted pretty good. I think that's why I'm still holding on a little bit. Not necessarily to him, but to the idea of him. And if you are reading this, guy-friend, I feel compelled to say that I really am happy we met. You are a nice person, and a gentleman at that. Thanks for going out to get hot chocolate in the snow even though we had just met. That was pretty cool of you. (Oh, and opening every door for me for the first few weeks we were dating. That was cool, too.)

Anyway, I'm hoping that I'll bounce back to good ol' me soon. Not thinking about men/relationships/everything that comes with it, and just enjoying what I have going in life right now. Like the homemade guac waiting for me in my fridge, or you know, just living part of my dream in the greatest city ever.
I am loving New York, so much. The lifestyle can be hard sometimes, I'll
give it that, but despite the inconveniences, it's a city that is
steadily gaining a lot of my heart. And yes, the snow just plain sucks
sometimes, but it's also dreamy and magical. And well, that trumps just
about anything.

I've decided to start a new series on the blog: photos & ___. The 'blank' could be thoughts, links, or anything really. Reason being- I'm that girl. You know, the one who needs organization, who works and imagines best in a clutter-free space, where essentially everything in my home has it's own home. And because this started (and still remains most of the time) as a food blog, my nonexistent-yet-might-as-well-should-be-OCD tells me that every thing I post simply must be a recipe, with many photographs, and an ever-intriguing story to go along with it. But I want to be able to share random things (aka the parts of my life that may not include food) with you all and not feel like I am doing this blog any injustice by not adhering to what has become my "outline." Yes. there. I said it. I know there's a good chance that at this point, you may think I'm a little bit crazy. And that is ok because there's a good chance I won't deny it.

I took these one afternoon when I was in the mood to
shoot some still lifes of my bedroom. I'm a lover of windows and a lot of
light, (if you haven't gathered from my instagram photos), so it tends to inspire me often. My best
friends like to tease me about it, but ya know, I'm ok with it.

PS; hello lovely little succulent. I don't know how you are still alive but I am so happy you are!

Happy weekend, everyone :)

Last month I photographed an art class in Chelsea for a lovely artist that I have been assisting lately. I had a pounding headache afterwards, but it was my only day off (well, most of the day off) in two weeks and I didn't want to waste it at home, on a Saturday nonetheless. I headed to Williamsburg for a couple hours to walk around the neighborhood, bask in the chill fall weather, and grab a latte at one of my favorite spots in the 'hood. I took too many photos. But I couldn't blame myself too hard, as everything from Bakeri's quaint backyard and vintage tea cups, to their quirky table cards and blue milkman jumpers, tend to captivate you wholly.

It was overcast and chilly, so most coffee-sippers and pastry-indulgers were packing cozily inside. All the better for me, though, as I ended up having the entire backyard to myself for most of the time. ("People won't see me snapping photos of the same latte and pear financier for an hour, thinking I am crazy?" I thought embarrassingly to myself.) In any case, it was just the kind of Saturday afternoon I was looking for.

Last Saturday me and a few friends from work journeyed upstate for a day of apple picking, apple-cider-donut eating, and fancy Iberico-ham-and-Manchego-cheese-plus-red-wine picnicking. Narrow, winding roads, canopied with leaves of red, yellow, and orange, nestled around charming, picturesque homes that we instantly dreamed were ours, filled our peripherals. We pulled up to Wilkens Fruit & Fir Farm, only to roll the windows down and take in the sweet scent of warm apple cinnamon wafting from the bakeshop and into our noses. It was a fine, fine day for the senses.

Getting up there was a feat. The other journeyers drove, while I took the Metro North due to unforeseen LIRR cancellations and
mad dashes from Penn Station to Grand Central in what I had hoped to
take 13 minutes or less. It took 13 minutes and 34 seconds. It's an
unfortunate moment when you witness the train pulling out of the station as you're approaching the platform feeling short of breath and at that point, hopeless. And so naturally, as I waited for the next train out to Croton-Harmon, I people-watched at one of the best places to partake in such an activity. I secretly hoped for a flash mob to break out before my eyes, but what girl can be so lucky to catch an empty cab at the exact cross street she needed at the exact time she needed (even though traffic was just plain terrible) AND witness one of the coolest things ever? Not this girl. I did, however, have a very unexpected and very beautiful view of the Hudson River and the Fall foliage all along my way up. Suddenly, taking the Metro North wasn't all that bad.

With our stomachs full, we ventured out to the orchard and began our picking. It was so, so lovely. The next best thing to eating as many apples as you possibly can, is photographing them. I don't know why it felt entirely satisfying to be surrounded by so many apple trees. But it did. So with an apple in one hand (and/or mouth), and a camera in the other, I soaked up the most Fall-ish day I think I've ever had. All while in very good company.

October, you are quite sneaky. How and when did you arrive so
quickly? The chilled breeze you bring along with you, the one that
strokes your skin & gently sweeps your
hair back while walking the streets of the city, is the perfect sign of
Fall. You're making me crave pumpkin spice. Every day.

I love it.

And so, let me fill you in. I finally finished physics forever. I moved to New York. I graduated. I moved to New York.

I know I've been neglecting this space. It wasn't my intention in the least of sorts. In fact, I'm a little disappointed with myself. But I've been giving my internship my all, and with the added commute to Brooklyn, this gal is freaking exhausted.

The good news is, New York is my happy place. It's one step closer to everything I see for myself and my future. It holds my dreams. At least I believe so. I'm inspired every day. The weather is starting to feel incredible. The internship, it's wonderful. My co-workers, they're wonderful. I'm learning quite a bit and meeting such lovely and amazing chefs. That's all wonderful, too.

I'm currently searching for a room to rent in Brooklyn. And once I find the right place- the place I can be creative, feel a bit more like myself again, and have time to devote to the things I love- I'll be the happiest girl.

Usually I share recipes and kitchen-related things here, but since I don't have that (insert sad/disappointed/I-really-miss-having-time-to-cook-a-lot face here), I'm doing a bit of link-love and sharing some photos from Instagram.

This pumpkin spice granola from two peas and their pod is everything you want in a healthy, yet captures-the-essence-of-Fall snack. I bought this candle from Anthropologie last weekend. Hello incredible smelling room. The bodega downstairs from work that I have a bit of an obsession with has some plump and juicy concord grapes. I think it's a sign that I need to make these handpies from apt. 2B baking co very soon.

Tomorrow I'm headed upstate for some apple and pumpkin picking! Donuts, cider, (and apple cider donuts) will be sinfully enjoyed. We'll also be having ourselves a nice little picnic either at a nearby park or at the orchard. Oh, how I love you, Fall.

Ashhttp://www.blogger.com/profile/10322855845363249601noreply@blogger.com2tag:blogger.com,1999:blog-2496278145109639636.post-57080985161327304122013-07-02T00:27:00.000-04:002013-07-02T12:59:10.597-04:00a simple breakfast

As much as I dislike to admit it, I do my best thinking and writing at odd hours of the night. It's currently 2:36 am, and about 5 minutes ago I remembered a photo I recently took of my breakfast the other morning. I was just browsing the web, not tired enough to close my eyes just yet, when I came across this tip from A Cozy Kitchen. Definitely trying that one soon. I'm diverging, it's late, and yet I suddenly feel compelled to write. About a very, almost "stupidly," simple breakfast. I wasn't around yet when the word "stupid" was used for emphasis, but for whatever reason that is the only word coming to mind, and well, I'm going with it.

I think it was the contrasting colors sitting before me that made me whip out my DSLR and snap a quick photo. Only after I instagrammed it, though. Isn't that how it seems lately? More iPhone, and less of everything else. I don't mind it all that much. However I am making a conscious effort to take my Nikon out with me more. I'm diverging again. Back to the breakfast.

I truly love pancakes, muffins, French toast, and anything that can be seen as the epitome of breakfast. I can't say I'm surprised. That time of the day when the sun screams morning. The coffee is brewing, you can see the steam rising from the coffee pot. Your cat is meowing to the loudest of his ability (he wants breakfast, too). And then that thought, "What should I couple with my coffee this morning?" It's all my favorite.

But we don't always have the time to make elaborate breakfasts. Or maybe it's that we want to eat a bit lighter in the morning. I'd say it's a mix of both for me, depending on the day. In any case, something as simple (and delicious) as sliced grapefruit, a dollop of Greek yogurt & topped with organic agave and oats, can be just what you need.

I'm tired now. And ironically dreaming of these.

Ashhttp://www.blogger.com/profile/10322855845363249601noreply@blogger.com5tag:blogger.com,1999:blog-2496278145109639636.post-55011213040949113692013-06-25T02:18:00.003-04:002013-06-25T14:56:37.664-04:00vanilla raspberry rhubarb frozen yogurt

There's only a handful of things I can confidently say I'm obsessed with. Frozen yogurt might just be at the top of that list (if not first), and I'm completely okay with that. I would eat it every day if I could. Combine that with this sweltering 90 degree weather, my favorite berry, and an in-season gem, and enter: vanilla raspberry rhubarb frozen yogurt.

It's tart, sweet, creamy, and cool... what more could you want in a frozen treat? Chocolate, but that's for another post. I suppose you could drizzle some dark chocolate on top of a heaping scoop of this, though. Actually, that sounds pretty damn delicious.

I'm a little late on the rhubarb game. You see, in most regular towns, rhubarb is easily accessible, especially around this time. Here, some people don't even know what it is. I was able to find it at a grocery store, pre-packaged, and thankfully it was still quite tasty and fresh.

I'm pretty certain that this homemade fro-yo kick isn't going away anytime soon. I'm hoping to perfect the texture a bit better in my trials to come, as well as experimenting with some new flavors. Martha Stewart has a frozen yogurt recipe that definitely didn't remind me of your typical homemade recipe.

The addition of an egg and a couple of other ingredients has me convinced that the texture is more like an ice cream, and possibly easier to scoop straight out of the freezer? I'm not sure why I'm so set on that (I haven't tested it or read that it does), but it probably has to do with my love affair of TCBY's scoopable, ice cream-like fro yo. No homemade frozen yogurt has ever compared. Martha, I hope you can change that.

Summertime is upon us. My grandpa's patio is gleaming bright with all kinds of greenery. Chirping from the birds, the sweet "hello's" I hear from Lola our Cockatoo, and the sounds of the peaceful waterfall remind me that I am blessed to be spending my summer months here with my wonderful grandpa.

I've had salads on my mind for days, and began scribbling down combinations of ingredients whenever they had come to mind. Maybe it's the warmth, or maybe it's just my lack of consuming enough healthful foods lately, but I've been craving all things fresh and grown from nurturing soil.

I've recently become aware that my small hometown finally curated a farmer's market. It's about damn time, Spring Hill. I paid a visit a couple of weekends ago on my way to go thrift shopping, and although it didn't compare to other farmer's markets, I'm still proud. It's a start, albeit a small one. It seems that this town may slowly be learning the importance and appreciation for food grown with love. I was disappointed, however, that I couldn't find my arms full of rhubarb like I had hoped. It's been on my mind, too. 'Tis the season!

I don't know what influenced me to come up with this salad. To be honest, I think I was craving watermelon as I was grocery shopping one day, and it all flowed from there. I tested out the recipe a couple of weeks ago, with the intentions that I'd have it up on the blog days later. When will I come to the realization that as long as I'm enrolled in some form of a physics class, all things blog/food/photography related will never go as planned? Sigh.

The good news is, my professor is pretty freaking awesome, and this salad is insanely delicious & simple. Two things to keep me happy for at least a little while. And hopefully you, too. (The salad part, I mean.)

Utterly refreshing and juicy, I found myself eating almost both servings after I finished shooting today. And I wasn't even that hungry because I had already been snacking on the melon throughout the day. That's kind of saying something. I say "kind of" because I've known myself to eat purely for taste rather than for hunger on multiple occasions. And I know I'm not alone on that!

When Justin DeMutiis, a good friend of mine and very talented wedding photographer, called me and asked if I'd be interested in making the cake for a wedding inspiration shoot, I felt incredibly honored. Not only would I have a reason to bake a cake, but I would be working alongside my other dear friend, Eileen Pandolfo from Twine Bindery. Justin explained that this wasn't just an ordinary shoot, but it is organic in every sense of the word. The theme was to consist of green and white colors, and to take place at a venue where you could completely get lost in nature.

If you follow me on instagram, you may remember some photos I posted from that day, the above being one of them. Bok Tower Gardens was so beautiful, even under the rain that graced the leaves and flowers for most of the afternoon. Ultimately, we felt the rain actually added to the shoot. Mother Nature presented herself in many forms that day, fitting the theme almost perfectly.

I was able to quickly snap just a few photos of the cake before Justin stepped in. If you travel over to his blog, you'll be able to view many more photos from the wedding inspiration shoot. They are stunning! You can also check out Ruffled Blog, where the shoot was featured.

Inspiration for the cake not only stemmed from the earthiness of the theme, but from Florida's state flower as well, the Orange Blossom. Although a slightly uncommon combination, the hint of rosemary against the delicate floral taste of the orange blossom water worked seamlessly, as if they belonged together all along.

A love affair bloomed in February. Between a homebody's taste buds and a soft, yet perfectly textured, nutty pseudocereal. Or simply put, me and that delicious thing that most of us pronounced "kin-O-uh" before we found out the actual pronunciation. Sure, I had tried it a few times in the past, but recently something just sparked. I just can't get enough of the darn thing. I suppose that's not so bad, though. It's versatility and nutrient-dense content seems to be everything one healthy(ish) foodie could hope for.

Around this time, I found a pleasant email in my inbox from The Florida Tomato Committee, asking if I'd be interested in developing an original recipe for them using a sampling of Florida farm-fresh tomatoes to help celebrate the month of April as Fresh Florida Tomato Month. As I read through it, Summer had outlined what the process would entail, and that my recipe would be published on The Florida Tomato Committee's website along with recipes from a handful of other bloggers. It was flattering to read, and definitely exciting, as it was my first time being monetarily compensated for recipe developing!

My brain immediately went to work. My first thoughts were to keep it healthy, wholesome, and to highlight the freshness of the tomatoes. I tried brainstorming out-of-the-box ideas, but I soon found myself back to the comfort of a simple basil + tomato combo. What can you really expect from an Italian girl, though? And just as I had almost forgot about that affair with quinoa, it hit me.

"It would be just perfect," I thought. And the rest just flowed... "something cool & creamy, something bright & herb-y, something a little peppery." Alas, the recipe had been developed.

I sent my idea over to Summer, and the next thing I knew I had a huge box at my front door from The Florida Tomato Committee. In it was a styrofoam cooler filled with a never-before-seen (at least from my eyes) fruit/vegetable ripener bowl, and copious amounts of Florida tomatoes. It was fantastic. The unripened, orange-hued fruits were begging me to place them in my ripener and await the color transformation to a deep, rich (& juicy) red. I ate at least one a day. Usually sliced and drizzled with my grandpa's recipe for homemade balsamic vinaigrette.... Bliss.

The final dish came out just as I had hoped. It can be "dressed up" or "dressed down," which is yet another reason I adore this salad. In other words, you can arrange it on a platter for a casual dinner party/lunch gathering/etc. as I've shown in the photos, or simply chop it up & toss together for a quick weekday lunch. And a very wholesome lunch at that.

For the longest time I've wanted to make homemade pasta. In reality, I knew it wouldn't be that difficult to do, but I kept putting it off because the thought of making it entirely from scratch did seem a bit daunting. After attempting it for the first time, I can't believe I was afraid to ever do it! I found it to be really enjoyable, and almost a bit relaxing. There are countless shapes and doughs, but I was inspired to make orecchiette by Linda Pugliese, a food photographer in NYC. I really admire her work, and when I saw her stop motion film I knew I wanted to give this shape a go. I did a Google search on how to make & shape orecchiette, and came across a Martha Stewart recipe. It seemed very straight forward, so I decided to go with it. This recipe uses a mix of AP flour and semolina, however next time I think I'm going to try all semolina. Linda was kind enough to send me a few links to videos and give me some tips to improve my orecchiette next time. Thank you again Linda!

My shaping definitely needs a bit of work. Before I got into the routine of how to shape the pasta, the first handful came out a bit flat, or the edges a bit too thick. Rather than getting discouraged, I decided to describe them as "rustic" ;)

I halved Martha Stewart's orecchiette recipe since it was my first time making it. I cooked all of it, but didn't end up using the entire amount in my recipe. I've always been terrible at guessing how much pasta cook. I never get it right; either too much or too little! If I had realized that cooking all of the pasta would have yielded too much for my recipe, I would have froze the amount I didn't need. Instead, I just refrigerated the left over cooked pasta and tossed it with a little butter & grated parmesan the next day for lunch :)

For my recipe, I probably used about 1 1/2 to 2 cups of cooked pasta, though I honestly didn't even think about measuring. I would say to go with your gut and add as much pasta as you think fits with the amount of the other ingredients. Afterwards, you should be left with about 2 servings of my recipe. Although, two servings for some may just be one big one to others. If you're like me or my family, when we eat pasta, we really eat pasta.

A few photos from our camping trip last fall in Blue Ridge, Georgia. These moments were almost too beautiful for words. You can read more about it here.
I'm a true admirer of everything having to do with film. The tones, the authenticity, the grain... I love it all. While I own an old, vintage film camera, I don't get to shoot with it often. The reality is that I usually shoot with my DSLR, especially when it comes to food. I started using Visual Supply Co's (VSCO) app for the iPhone to quickly edit the photos taken on my phone. I fell in love with the variety of reproducible film looks it offered, and the interface is quick & easy to navigate. Just when I thought it couldn't get any better, it did. VSCO created film packs that you download onto your computer for your specific editing software (I use Camera Raw, but they offer it for a few others as well). I was elated! The new film 03 recently came out, consisting of instant films, and I purchased it without hesitation. The presets & camera profiles load into your editing software, allowing you to choose from tons of different films very easily. I'm seriously in love! I got lost in it for hours, exploring & experimenting. I gathered some photos I took in NYC from my last few trips to show you some of the "cold" film looks. For some reason I always find myself loving them. It was also super cloudy & overcast in all of these photos, so the cooler film seemed to work well in my opinion :)

Phoebe gets "the hummus!" flung on her yellow dress right before Ross's museum banquet and she ends up putting a huge Christmas bow over it, haha. It's probably one of my favorite episodes, and also the first time I ever heard the word "hummus." I thought, "what the hell is HUMMUS?" Mind you, this was probably back in '05. Thankfully, once I found out what it was, I decided to give it a try. I can't remember if I liked it at first. Knowing the old me, I probably didn't. I came around at some point though, because for years now I've been pretty much obsessed!

I've always bought hummus at the store, especially before I started to really get into making many things homemade. While there are some good brands out there, nothing beats making your own hummus. You can cater to your own texture; really smooth versus kind of chunky/thick (my personal preference), and flavor it however you like. I haven't done a price comparison, but I am pretty sure it's cheaper too, especially if you do the real deal and buy your chickpeas dried rather than canned.
It's really freaking delicious, especially when paired with whole grain pita chips or some baby carrots!
I love the little green flecks you see throughout it due to the fresh
parsley. The warmth from the cumin offsets the freshness from the lemon and creates a nice balance.
I termed this "classic hummus" because although it's flavored with hints
of lemon, garlic, and parsley, it is pretty much the "original"
flavored hummus you'd find at the store, but with a little kick! This
makes a great base for other flavors, such as roasted red pepper or
tomato basil, or just eaten as is (which is what I've been doing.)
Oh, before I forget, I wanted to mention that I finally created a portfolio site for my food photography! I still need to add an "about" and "contact" section, but so far I am really liking it. Although my Etsy shop is called "Craves & Composition," I wanted my actual name to be apart of my hopefully business-to-be in the future. It's simple and to the point; "Ashley Centola Photography." Let me know what you all think! :)
It's really delicious, and quite thick too. I prefer to use frozen fruit over fresh because it adds bulk and makes the smoothie super cold without having to add ice. Perfect for these hot January days. (Which P.S.- I am NOT happy about.)
They slightly thaw as you're slurping this baby down, so once you reach them they are basically the perfect texture; still cold & slightly icy :))
I also like to sprinkle a bit of ground flaxseed on top, because, well, why not? It's a good source of omega 3's, packs some protein, and contains fiber. I'm obsessed with it! I add ground flaxseed to oatmeal, baked goods, smoothies, yogurt, granola, etc. For reference, I get the organic ground flaxseed by Bob's Red Mill :)
My friend Alex came over this past weekend to do some cupcake baking and to bond over our mutual love for anthro and all things food-related.
We both like to experiment when it comes to baking, so it only seemed natural to make some healthier substitutions and put our own spin on the recipe. The result? A light, moist, minty chocolate cake with a satisfyingly sweet center. AKA mint chocolate perfection :)
Years ago my brother brought me back a soft leather notebook from Florence, Italy, and I've adored it ever since. I use it to write down my goals and to record my ideas/inspirations. One of the things at the top of my goals list is to bake more often. I truly love everything about it. Especially since I can endlessly use my new measuring spoons that I'm pretty much obsessed with.
We used whole wheat pastry flour (my absolute favorite for cakes and pastries) instead of all purpose, and Sucanat instead of regular cane sugar. If you're not familiar Sucanat, it is an organic, wholesome sweetener that is not very refined and still contains some nutrients & original molasses content. It may have been one of the best discoveries I've ever made. Although some people feel it can only be substituted for brown sugar, I find that it can work very well in place of white cane sugar in certain recipes. I very rarely use white cane sugar because I never find the need to with Sucanat always stocked in my house.
These granola clusters are so yummy! And healthy too :) A good amount of them came out perfect, but others were too crunchy and tasted like they had baked too long due to my ancient oven's hot spots. I coped with it by deciding to use the too-crunchy clusters as cereal. The milk softens em' up a bit!

Gainesville recently got a Trader Joe's (insert super happy face here), so I decided to make a 'quick' trip over there today to pick up pecans for this recipe. But as usual, my grocery store trips are never as fast I wish them to be. I ended up browsing each aisle, making mental notes of certain things that they do/don't carry, getting really excited over cheap/raw/all natural almond & sunflower seed butters, and chatting up some nice employees about another recipe I'm trying out tomorrow. I'm really loving Trader Joe's so far, even though I've come to terms with the fact that I'll still have to shop at about 3 different markets just to get my usual stuff. What we really need here is a Whole Foods!
You can definitely add more sweetener to these if desired, but I plan on using them in my yogurt, which is already sweet enough. Regardless, these are so good! And when you see that the recipe calls for a "heaping" amount of cinnamon, don't dismiss it! It made a difference to my taste buds :)

(And hopefully the first of many!) I'm really excited about this year. I can feel a lot of good vibes in the air :) I have some resolutions and goals I'd like to share with you all, but I think I'll save that for some of my coming posts. In the meantime, I've been wanting to write about today's post for awhile, and I figure now is as good a time as ever.

Eating healthy and losing weight may seem like a cliche/only-do-this-in-January-then-quit resolution, but if you actually stick with it, you won't be part of the cliche! As a nutrition-obsessed foodie, I feel it's my responsibility to impart some knowledge about maintaining a healthy, wholesome diet. Believe it or not, a lot of people simply do not know the first thing about choosing healthful foods. Although some of it can seem like common sense, nutrition education is probably less prevalent than you think. It is actually something that I feel pretty strongly about, and hope to get involved with in the near future. The fact that my dad has asked me over the last few days how to make healthier decisions was basically the icing on the cake in getting me to finally write this. (Or should I say the peanut butter on the banana? We're on healthy terms now ;)) A little visual inspiration never hurt anyone.... :)
I wanted to put together a few tips that have helped my mind and body feel good, helped me save time throughout the week, and helped me make a slightly more positive impact on the environment. You may already know all of what I'm going to say, and if you do, that's really great. Also keep in mind that all of us come in different shapes and sizes, and although there are RDAs/AMDRs for vitamins/macronutrients geared toward the average person, I will not be posting anything about how many calories/grams/percentages you should be consuming.

*Remember that while what you eat is of course important, staying active is also imperative to your health and well-being.

whole grains, fruits & vegetables, lean meats,

low-fat dairy products, nuts/seeds, minimally processed foods

Cut out the white bread & replace it with whole wheat or honey wheat

Use brown rice instead of white

Incorporate rolled oats into your diet somehow. Sneak it into smoothies if you have to.

Cook with Extra Virgin Olive Oil rather than butter & use in simple, homemade dressings. EVOO contains the heart-healthy fats you want, and isn't refined!

Choose whole wheat pasta over regular (and read the box closely because some are only 50% whole grain!)

Choose
chicken breast and ground turkey breast in place of chicken
thighs/wings and ground beef. If you want to use ground beef, choose the
leanest cut, which is usually a 93/7 combination.

If you can, cut back on the animal protein and replace it with more plant-based protein

Use fat-free/skim milk, or if dairy-free is desired, try Almond or Soy milk

Ditch the soda, fruit punch, diet soda, and basically anything that isn't water. My best advice to incorporate more water into your diet is to keep a water bottle on you at all times. I have a Camelbak with a water filter in it and it's become something I can't leave home without. Even when you think you're not thirsty, you'll want to grab for it and take a sip just because it's there. :) I end up refilling mine at least 3 times a day!

Just
by making those transitions & making wiser decisions, you will consequently lower your intake of sugar/bad
fat/ingredients you can't pronounce, and increase your intake of fiber, good fat, and wholesome nutrients you CAN pronounce :)

Processed
foods are foods that have gone through extensive 'processes' to become
what they are. Through that, nutrients can be lost, preservatives are added to extend shelf-life and
stability of the item, and they are usually high in fat, sugar, and
sodium. Candy bars, cookies, frozen foods, certain cereals, and certain
granola bars (YES guys, those Fiber One's & other bars of-the-like
can be deceiving!) are all examples of processed foods.

Instead, create your own meals from wholesome ingredients that actually offer value to your body. I'm not saying you can't have biscuits with dinner one night, or a warm baked potato with some real butter. But if you do, see if you can make homemade biscuits using whole wheat flour. They're actually quite simple and you know exactly what's going into it. As for the potato, maybe opt for a sweet potato that offers a bit more nutrients and will "make up" for that slab of butter if you must have it ;)
school functions and loving to re-arrange and re-decorate my bedroom
more times than my mother (and my mother's wallet) could count. It wasn't
until high school, more specifically yearbook class, where I found a new
love for graphic designing. It was all about "having an eye" for creating the type of book we envisioned. And this wasn't your ordinary yearbook. We went to actual yearbook conventions to better our abilities, get inspired, and ultimately create a really great book.

In addition, I was surrounded by other
talented classmates and a wonderful teacher, Eileen, who I have a lot to thank
for. She is also a very good friend of mine to this day & now runs her own business, Twine Bindery. We stayed after school for hours, eating almonds, laughing
hysterically, mimicking how her cousin Maggie talks (hilarious!), and
most importantly, working hard to meet deadlines. I didn't care about
staying late or devoting much time to it because I really loved it. And while I miss it, I've channeled my creativity in different
ways; This blog of mine, cooking, DIY projects I've done from time to time, photography, and basically anything that allows me to "use my eye." I believe that's why food styling/photography instantly appealed to me. I'm fortunate enough to combine two things I can't live without: cooking and composing.

Composition can apply to so many things. The way items or people are positioned in a photograph, where a frame is placed in your bedroom, how the furniture in your living room is brought together to create a comfortable and flowing space, how a recipe is constructed, what you decide to throw together for your outfit tomorrow.... I could go on and on.

Maybe it's best to describe it simply by using its definition;

com-po-si-tion (n) /ˌkämpəˈziSHən/

The nature of something's ingredients or constituents; the way in which a whole or mixture is made up.

The action of putting things together; formation or construction.

(source)

I'm fascinated by it. I love to compose in every way that I possibly can. Food greatly brings out that characteristic in me, and I love it for that. But I'm also very content doing other things, too;

any project where I can use my hands: gardening, wood-working, crafting, organizing

projects where I mentally compose, such as planning (then transfer to some sort of tangible medium or else I will forget), or envisioning how I want a photograph to look.

styling & designing; any and all kinds! food styling, what I wear and how I wear it, the way I decorate my living space, graphic designing, and so much more.

And of course, this all includes how to complement colors, textures, and well, styles.

The beauty of composition is that it's yours to do what you want with it. To have fun with it, to be creative with it, to show expression, to put your heart in it.

Isn't that what life is about? Putting your heart into what you love. I thrive on creativity... on making, creating, sharing, and physically living it.

It's who I am. I know I inherited some of these qualities from my grandmother and grandfather on my mom's side. My grandmother is an unbelievable artist. Her talent amazes me. I've mentioned my grandfather on here before, the awe-inspiring chef from Sicily. Two pretty incredible people that I can relate to in so many ways. (I can relate to my dad's parents, the Centola side, in many ways too. We cry a lot at family gatherings, but that's another story.)

I would only be so lucky to become successful in doing what I love. And while I want to jump in with both feet right now, I realize that sometimes I'm only able to put one foot in due to situations I can't control. Small steps can be good steps! (Or at least it's what I have to keep telling myself.)

I'm starting to lose track. I thought this might happen! So anyway, you may be wondering the point of this post; why I've written a novel about creativity when I probably could've said, "I use 98% of the right side of my brain 98% of the time." Or something to that effect.

I wanted to officially announce it on my blog since I have yet to do so. I decided to open up my very own Etsy shop, Craves & Composition, to create, compose, and do what I enjoy so much.

I wanted to create a cohesive look between my blog and my shop, so as you may have noticed, my blog design is slightly different. I am beyond happy with how everything turned out; from the fonts I chose, to the floral & lemon design, down to the title of my shop. While the font doesn't have much meaning (I just really liked the clean look of it), the lemons & floral photo do. I took that photo in Washington Square Park, New York City back in July. It was such a vibrant bed of flowers & NYC is where I hope to find myself in the near future. Lemons have always been a favorite of mine, and they are very abundant on the beautiful Amalfi coast in Italy. I dream of visiting there one day. I thought the combination of the two represented my shop (and me) quite well.

You can visit my shop at anytime by clicking on the "shop" link at the top right of my blog or clicking on my "shop Craves & Composition" badge slightly below that. :)
For those of you who’ve already finished all of your holiday cooking and baking days ago, I truly commend you. No matter how much I plan, or how hard I try to be ahead of schedule, somehow I am always up all night the day before Christmas Eve.

It was difficult to do anything too far in advance because with being in NYC, then going to Disney, THEN having a Christmas Pajama Party with half of your relatives, it was hard to find time. That left me with one day. One day to grocery shop, execute the plan, and execute it well.

With that being said, I'm happy to say that I am almost finished! Well, with cooking/baking/spending 10 hours in or around the kitchen. Just a few more easy dishes to prepare for dinner, some gift-wrapping, and some last minute gift-buying/making (eek).

I’ve been on a tight budget lately, so I’ve been taking full advantage of awesome homemade gifts. If you still need another gift for a woman in your life, this would be pretty freaking perfect. And you probably already have the two main ingredients in your pantry :)
I saw this on the free people blog back in August, and being that it looked so easy, I figured I’d be making it for someone soon, if not myself! All you need is:

Sugar
can be raw, organic, large crystals, small crystals, etc

Olive Oil
I’ve also read that you can use different oils, such as coconut oil

Essential Oil
Technically it’s not necessary, but I think it gives it something extra.

Peppermint is extra essential for the holidays ;)

I really liked how the scrub turned out. I made a small batch to test it out and it made my skin so soft! Just as a guide, I used:

4 tablespoons of regular granulated cane sugar
2 tablespoons of extra virgin olive oil
4 drops of peppermint essential oil

This amount yielded enough to use the scrub a few times. But of course that will vary person-to-person depending on how much you use at a time. For an 8 ounce jar, I doubled that batch and it was perfect.

To assemble the scrub:

Find a jar/container that will hold up well when wet. This will most likely be kept in the shower, after all.

In a mixing bowl, mix together the sugar and oil in a 2:1 ratio. Two parts sugar, to one part oil. (This allows you to make as big a batch as you’d like).

As for the essential oil, it can vary depending on your preference. I used 4 drops of peppermint essential oil for 4 tablespoons of sugar and 2 tablespoons of olive oil. To me, this was the perfect amount. You may like more or less, so I would start out with 1 drop and add more as you feel. :)

When I was at the thrift store a few weeks ago, I found these really cute, blank holiday cards. I bought some awesome Christmas stamps on sale at Michael's as well, so I'm going to personalize the cards and hand them out with my homemade gifts!
window shopping, went ice skating at Rockefeller Center, and ate some

I've been watching that as I do last minute packing/organizing/nail painting/eating of my favorite Linzer cookie. So great. "Oh my God I shot my eye out!" Just kidding.
